The winery is built on historic ground. In the middle ages, there was a castle right next to it. According to some tales the castle was the residence of the Knight Hundt - today's landmark of the community Saulheim.

The former garden of the castle was located right underneath the present winery walls. The tag "Am Schloßgarten", where the estate of first built in the 18th century, testifies to the historical reference. The name "Schloßgartenhof" is unique to Germany and gives the winery a distinctive touch.

The knight also leaves his mark; the sparkling wine series carries his name, and makes the wine community in Saulheim known beyond its borders.
